Bhuna Khichuri


1 cup moong daal (lentils)
3 sticks 2.5 cm/1-in cinnamon
2 cups polao rice
3 cloves
1/3 cup ghee or butter oil
1 bay leaf
2 teaspoons finely chopped ginger
Salt to taste


Roast moong daal in a frying pan lightly. Rinse, rice and moong daal together, drain water.

In a saucepan heat ghee, put in all ingredients and fry for 2 minutes. Add 5 cups of hot water cover and cook for 20-25 minutes.

Serve in a rice dish. Garnish with sliced boiled egg and crispy fried onions. Bhuna Khichuri served with meat curry and fresh vegetables make a good menu.
